Here we go... Food storage recipes

We don't have our computer up yet so we can't share any pics of anything yet.  But lots has changed and we'll update you as soon as we get everything up.  HOWEVER...I am still trying my best at my new year's resolution, so here we go... Remember food storage stuff is in red.


Linnie's Spanish Rice

1 cup uncooked white rice
1 t minced garlic
2 cups water
8 oz jar of salsa

Combine the rice with the garlic in a large saucepan. Pour water and salsa into the rice mixture. Bring the water to a full boil and then reduce the temperature to simmer. Simmer for 20 minutes or until the rice is tender. Fluff the rice when finished. 

Really easy  and both David and the missionaries ate it all up!

Chicken Tortilla Soup (not my normal soup, but this is the food storage one)

2 cans chicken
6 T butter
1 clove of garlic
1 C. chicken stock 
1 can of corn
1 big can of diced tomatoes
1 T of parsley (dried)
1 1/2 C. salsa
tortilla chips
cheese
avocado

Put butter and garlic in crock pot, let melt.  After it melts, put the corn, tomatoes, salsa, chicken stock, parsley, and chicken in the crockpot, let cook for atleast 4 hours in crockpot on high or 8 hours on low.  Garnish with tortilla chips, cheese and avocado.

This is pretty good, but not as good as my other tortilla soup, but hey, I'd rather have this in an emergency than many other recipes!

Rehydrated Applesauce

NOTE: If you need apples in a recipe, use approximately one half the measurement called for in the recipe of dried apples.  Add the original amount called for of boiling water over the dehydrated apples and let them stand until rehydrated.  For example, if your recipe calls for two cups of apples, you would use one cup of dehydrated apples and two cups of boiling water.  Once rehydrated, the apples will have more volume and you may need to adjust the amount of apples used  to get the proper amount required by the recipe.  The apples will be ready to use in your recipe.
You can use as many cups of apples as you want... Put your rehydrated apple mixture in your blender or food processor and blend until smooth. You can even add other fruits if you'd like, but I didn't try it...
