Bean and cheese burritos
Ingredients
Multi Grain tortillas
Pinto beans (#10 can did a quick soak in a crock pot for 4 hours, then cooked another 6)
Cheddar Cheese
1 Taco Seasoning packet
Can of Green Chiles
Taco Bell Mild Sauce
1 Medium OnionDirections
1. Blend pinto beans and taco seasoning in a blender with water until smooth. Cut up onions and mix chiles (undrained) and onions together. Spread beans, cheese, chile/onion on tortillas and wrap into burritos. Put in 9x13 pan and cook at 350 for 20 minutes. Top with Taco Bell mild sauce. David and Clark really liked these!
Spinach pizza
Ingredients and recipe for dough
- 1 (.25 ounce) package active dry yeast
- 1 cup warm water
- 2 cups whole wheat flour
- 1/4 cup wheat germ
- 1 teaspoon salt
- 1 tablespoon honey
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
- In a large bowl combine flour, wheat germ and salt. Make a well in the middle and add honey and yeast mixture. Stir well to combine. Cover and set in a warm place to rise for a few minutes.
- Roll dough on a floured pizza pan and poke a few holes in it with a fork.
- Bake in preheated oven for 5 to 10 minutes, or until desired crispiness is achieved.

- 1/3 cup balsamic vinegar
- 1/2 cup olive oil
- 2 tablespoons Dijon mustard
- 1 tablespoon honey
- salt and pepper to taste
- spinach
- red bell peppers
- tomatoes
- onions (optional)
- mozzarella cheese
Directions
- Whisk balsamic vinegar, olive oil, mustard, honey, salt, and pepper in a bowl. Toss dressing into toppings (spinach, peppers, tomatoes, onions, mozzarella cheese). Then put toppings on dough.
Black bean pasta
Ingredients
- 8 ounces uncooked spiral pasta
- 1 cup finely chopped green pepper
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon crushed red pepper flakes
- 2 cups tomato sauce
- 1 (15 ounce) can black beans, rinsed and drained ( I used ones that you have to soak for 10 hours and cook for another 8, yep I tried my #10 Can of black beans!)
- 1/2 cup shredded reduced-fat Cheddar cheese
Directions
- Cook pasta according to package directions; drain. Meanwhile, in a large saucepan coated with nonstick cooking spray, combine the green pepper, onion, garlic, oregano, cumin and red pepper flakes. Cook over medium heat for 5 minutes or until tender. Add tomato sauce and black beans; bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes or until heated through. Stir in pasta. Sprinkle with cheese.

You have GOOD food storage. I've been doing the same thing but mostly out of necessity because we've had to cut back our grocery bills so I've been supplementing with food storage stuff. I've actually really enjoyed being forced to get creative. Thanks for sharing your ideas.
